From the experience of our project we can say that one of the most pleasant surprises was the Cabernet Sauvignon planted on fresh Galestro soil (clay and limestone) with east exposure. Every year this vineyard gives us fantastic grapes, with small, uniform bunches and excellent ripe tannins, without ever showing green or herbaceous notes.
The small Syrah vineyard, on the other hand, provides us with an excellent blend base that is deep, smooth and powerful, perfectly complementing the racy character of the Cabernet. These two wines are the only ones that are aged in new oak barrels, but are never over-toasted.
